My Gluten Free Background

I am extremely familiar with the struggles of finding gluten free food. My little brother, Luke, was born with an allergy to wheat, which kick-started the gluten free movement in my house. After my brother's diagnosis, my mom often pushed the diet on the rest of my family because it simply serves as a healthier and cleaner way to eat! However, as any person who has attempted gluten free baking would know, it is no easy task. Luckily, I have an amazing mom who pinned it down to a science in just a few years. My mom TRULY perfected the art of baking and cooking gluten free food for my family to eat, she wanted to share her knowledge with other people. She baked delicious GF food out of our house for about two years. After gaining popularity, my mom decided to open her own GF bakery and cafe. The bakery and cafe got so busy, she then attempted to expand into the wholesale market. However, after six months, it took a toll on her health and she was directed by her doctor to quit baking. Although she can no longer bake, she wrote down her "famous" gluten free recipes in cookbooks for sale on her website at www.loribakes.com. With my mom's years of experience, it is pretty obvious to say that I have learned from the BEST gluten free baker there is!  Here are some gluten free recipes I would like to share with you.
